description abstractIn this research the effect of ultrasound time, amplitude and pH on yield and purity of ß-glucan extracted from hulless barley cultivar Lut were investigated by the rotatable central composite design. The statistical analysis showed that the coefficients of the response surface model of ultrasound time, amplitude and pH had significant effect on yield and purity of barley ß –glucan. The models presented in this study could be used to optimize the extraction of ß-glucan from hulless barley. Considering the importance and desirability of the response variables showed the best results are obtained when the ultrasound time, amplitude and pH was 4.45 min, 50% and 9 respectively. At the optimum point, extraction yield and purity were 2.5% and 80.82%, respectively.en
